Instructions

  • Pound the chicken breasts to an even thickness, about 1/2 inch.
  • In three separate shallow dishes, place the flour in one, beaten eggs in another, and combine the breadcrumbs, Parmesan cheese, salt, and pepper in the third.
  • Dredge each chicken breast in the flour, then dip into the beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
  • In a large skillet, heat the olive oil over medium-high heat. Add the breaded chicken breasts and cook for 3-4 minutes on each side, or until golden brown and crispy.
