- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese

- 1/4 cup olive oil
- 4 slices mozzarella cheese
- 1 cup marinara sauce
- 4 sandwich rolls
Instructions
- Preheat the oven to 400°F.
- Pound the chicken breasts to an even thickness, about 1/2 inch.
- In three separate shallow dishes, place the flour in one, beaten eggs in another, and combine the breadcrumbs, Parmesan cheese, salt, and pepper in the third.
- Dredge each chicken breast in the flour, then dip into the beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
- In a large skillet, heat the olive oil over medium-high heat. Add the breaded chicken breasts and cook for 3-4 minutes on each side, or until golden brown and crispy.
- Transfer the chicken to a baking sheet and top each breast with a slice of mozzarella cheese. Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and the chicken is cooked through.
- While the chicken is baking, heat the marinara sauce in a small saucepan over medium heat.
- To assemble the sandwiches, place a chicken breast on the bottom half of each sandwich roll. Spoon marinara sauce over the chicken and place the top half of the roll on top.
