Ingredients
- 1 cup of vegetarian sausage, sliced
- 2 tablespoons of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of Arborio rice
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of saffron threads
- 2 1/2 cups of vegetable broth
- 1 cup of frozen peas
- 1/2 cup of cherry tomatoes, halved
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large paella pan or skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the vegetarian sausage slices and cook until browned, then remove from the pan and set aside.
- In the same pan, add the remaining 1 tablespoon of olive oil and sauté the onion and garlic until softened.
- Add the sliced bell peppers and cook for another 2-3 minutes.
- Stir in the Arborio rice, smoked paprika, and saffron threads, and cook for 1-2 minutes to toast the rice and spices.
- Pour in the vegetable broth and bring to a simmer. Cover and cook for 15-20 minutes, or until the rice is almost tender.
- Stir in the frozen peas, cherry tomatoes, and the cooked vegetarian sausage. Season with salt and pepper to taste.
- Continue to cook for another 5-7 minutes, or until the rice is fully cooked and the liquid has been absorbed.
- Garnish with fresh parsley before serving.
