  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of Arborio rice
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of saffron threads
  • 2 1/2 cups of vegetable broth
  • 1 cup of frozen peas
  • 1/2 cup of cherry tomatoes, halved
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • Stir in the Arborio rice, smoked paprika, and saffron threads, and cook for 1-2 minutes to toast the rice and spices.
  • Pour in the vegetable broth and bring to a simmer. Cover and cook for 15-20 minutes, or until the rice is almost tender.
  • Stir in the frozen peas, cherry tomatoes, and the cooked vegetarian sausage. Season with salt and pepper to taste.
  • Continue to cook for another 5-7 minutes, or until the rice is fully cooked and the liquid has been absorbed.
  • Garnish with fresh parsley before serving.
