Instructions

  • Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
  • In a shallow dish, mix together 1/2 cup of flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon drippings in the skillet.
  • Add 1/4 cup of olive oil to the skillet with the bacon drippings. Place the chicken breasts in the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
