Instructions

  • Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
  • In a shallow dish, combine 1/2 cup of flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  • Dredge the chicken breasts in the seasoned flour, shaking off any excess.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add the chicken breasts and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add 1/2 cup of chicken broth, 1/4 cup of fresh lemon juice, and 2 tablespoons of capers. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  • Reduce the heat to low and whisk in 2 tablespoons of unsalted butter until melted and the sauce has slightly thickened.
  • Return the chicken to the skillet and spoon the sauce over the chicken. Cook for an additional 2-3 minutes to heat the chicken through.
  • Sprinkle with 2 tablespoons of chopped fresh parsley before serving.
  • Serve the chicken limone hot with your choice of side dishes. Enjoy!
