Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers
  • 2 tablespoons unsalted butter
  • 2 tablespoons chopped fresh parsley

Instructions

  • Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
  • In a shallow dish, combine 1/2 cup of flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  • Dredge the chicken breasts in the seasoned flour, shaking off any excess.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add the chicken breasts and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add 1/2 cup of chicken broth, 1/4 cup of fresh lemon juice, and 2 tablespoons of capers. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  • Reduce the heat to low and whisk in 2 tablespoons of unsalted butter until melted and the sauce has slightly thickened.
  • Return the chicken to the skillet and spoon the sauce over the chicken. Cook for an additional 2-3 minutes to heat the chicken through.
  • Sprinkle with 2 tablespoons of chopped fresh parsley before serving.
  • Serve the chicken limone hot with your choice of side dishes. Enjoy!

Italian

Chicken Limone is a classic Italian dish that originated in the coastal regions of Southern Italy. The dish features tender chicken breasts sautéed to perfection and then topped with a zesty and tangy lemon sauce. The history of Chicken Limone dates back to the traditional Italian cuisine, where the use of fresh lemons and herbs was prevalent in coastal cooking. Renowned chefs like Lidia Bastianich and Mario Batali have popularized this dish in their restaurants, bringing it to the forefront of Italian-American cuisine. Today, the best versions of Chicken Limone can be found in authentic Italian restaurants, where the key to a perfect dish lies in using fresh, high-quality lemons and perfectly cooked chicken. For a unique twist, some chefs also incorporate capers or white wine into the sauce for added depth of flavor.
