Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of breadcrumbs
- 2 eggs
- 1/2 cup of all-purpose flour
- 1/2 cup of unsalted butter, softened
- 4 cloves of garlic, minced
- 2 tablespoons of fresh parsley, chopped
- 1 tablespoon of fresh dill, chopped
- 1 teaspoon of lemon juice
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- In a small bowl, mix together 1/2 cup of softened butter, 4 cloves of minced garlic, 2 tablespoons of chopped parsley, 1 tablespoon of chopped dill, and 1 teaspoon of lemon juice. Season with salt and pepper to taste. Place the garlic and herb butter mixture onto a sheet of plastic wrap, shape it into a log, and refrigerate until firm.
- Place each chicken breast between two sheets of plastic wrap and pound them to an even thickness of about 1/4 inch. Season the chicken breasts with salt and pepper.
- Remove the garlic and herb butter log from the refrigerator and cut it into 4 equal pieces. Place one piece of the butter in the center of each chicken breast. Fold the sides of the chicken over the butter and roll it up tightly, securing with toothpicks if necessary.
- In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs. Dredge each chicken roll in the flour, dip it in the beaten eggs, and then coat it with breadcrumbs, pressing gently to adhere.
- Heat vegetable oil in a large skillet over medium-high heat. Carefully add the chicken rolls and cook for 3-4 minutes on each side, or until golden brown and cooked through.
