Created by: Howcan Team
Ingredients
- 1 lb chicken gizzards, cleaned and trimmed
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons chili sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- 2 green onions, chopped
Instructions
- In a large bowl, marinate the chicken gizzards with 1 tablespoon of soy sauce and set aside for 10 minutes.
- In a small bowl, mix together the remaining 3 tablespoons of soy sauce, oyster sauce, chili sauce, sugar, sesame oil, and black pepper to make the spicy chili sauce. Set aside.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the marinated chicken gizzards and stir-fry for 5-6 minutes until browned and cooked through. Remove from the wok and set aside.
- In the same wok, heat the remaining 1 tablespoon of vegetable oil. Add the onion, red bell pepper, green bell pepper, garlic, and ginger. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
- Return the cooked chicken gizzards to the wok. Pour the spicy chili sauce over the stir-fry and toss to coat everything evenly. Cook for an additional 2-3 minutes until heated through.
- Garnish with chopped green onions and serve the spicy chicken gizzards stir-fry hot with steamed rice or noodles. Enjoy!
The history of Chicken Gizzards Stir-Fry with spicy chili sauce can be traced back to the Sichuan province in China, where it originated as a popular street food. This dish has since gained worldwide popularity for its bold flavors and unique texture. The stir-fry method was perfected by skilled Sichuanese chefs who combined the tender, marinated chicken gizzards with a fiery chili sauce, creating a dish that is both savory and spicy. Today, the best versions of this dish can be found in authentic Sichuanese restaurants, where chefs use traditional woks to achieve the perfect char and smoky flavor. The key to this dish is the balance of heat from the chili sauce and the tender texture of the gizzards, making it a must-try for spicy food enthusiasts.
