Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 2 eggs
- 1/2 cup buttermilk
- 1/2 cup vegetable oil
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
Instructions
- Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
- In a shallow dish, combine 1 cup of flour, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of paprika, and 1/2 teaspoon of cayenne pepper.
- In another shallow dish, whisk together 2 eggs and 1/2 cup of buttermilk.
- Dredge each chicken breast in the seasoned flour, then dip into the egg mixture, and coat again with the seasoned flour.
- Heat the vegetable oil in a large skillet over medium-high heat. Carefully place the coated chicken breasts into the hot oil and fry for 5-7 minutes on each side, or until golden brown and cooked through. Remove to a paper towel-lined plate to drain.
- In a separate saucepan, melt 2 tablespoons of butter over medium heat. Whisk in 2 tablespoons of flour to create a roux. Cook for 1-2 minutes, then slowly pour in 2 cups of milk, whisking constantly until the gravy thickens. Season with salt and pepper to taste.
- Serve the fried chicken with the creamy gravy poured over the top. Enjoy!
