Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 2 eggs
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk

Instructions

  • Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
  • In a shallow dish, combine 1 cup of flour, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of paprika, and 1/2 teaspoon of cayenne pepper.
  • In another shallow dish, whisk together 2 eggs and 1/2 cup of buttermilk.
  • Dredge each chicken breast in the seasoned flour, then dip into the egg mixture, and coat again with the seasoned flour.
  • Heat the vegetable oil in a large skillet over medium-high heat. Carefully place the coated chicken breasts into the hot oil and fry for 5-7 minutes on each side, or until golden brown and cooked through. Remove to a paper towel-lined plate to drain.
  • In a separate saucepan, melt 2 tablespoons of butter over medium heat. Whisk in 2 tablespoons of flour to create a roux. Cook for 1-2 minutes, then slowly pour in 2 cups of milk, whisking constantly until the gravy thickens. Season with salt and pepper to taste.
  • Serve the fried chicken with the creamy gravy poured over the top. Enjoy!

The dish consists of a tenderized and breaded chicken breast that is fried until golden and crispy, then smothered in a creamy gravy. The key to a perfect Chicken Fried Chicken lies in the seasoning of the breading and the preparation of the gravy. Chefs in the Southern states, particularly in Texas and Tennessee, are known for their mastery of this dish. Today, the best versions of Chicken Fried Chicken can be found in renowned Southern restaurants and diners across the country.
