  • 1 yellow onion, sliced
  • 2 cloves garlic, minced

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped
  • 8 small flour tortillas
  • Optional toppings: sour cream, guacamole, shredded cheese, salsa

Instructions

  • In a large bowl, combine the sliced chicken with the vegetable oil, minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Toss to coat the chicken evenly. Let it marinate for at least 10 minutes.

  • Return the cooked chicken to the skillet with the vegetables and stir to combine. Cook for an additional 2-3 minutes to heat everything through.
  • Sprinkle the chopped cilantro over the chicken and vegetable mixture and stir to combine.
  • Warm the flour tortillas in a separate skillet or in the microwave according to package instructions.
  • To serve, spoon the chicken and vegetable mixture onto the warm tortillas. Add optional toppings such as sour cream, guacamole, shredded cheese, and salsa if desired.

Mexican

Chicken fajitas have a rich history that dates back to the ranch lands of West Texas, where Mexican cowboys, known as vaqueros, would grill skirt steak over an open fire. The dish gained popularity in the 1930s when it was introduced to the menus of Mexican restaurants in the United States. The sizzling combination of marinated chicken, onions, and bell peppers quickly became a staple in Tex-Mex cuisine. Today, the best chicken fajitas can be found in the border regions of Texas and Mexico, where chefs expertly marinate the chicken in a blend of spices and citrus juices before grilling it to perfection. The key to a delicious fajita lies in the seasoning and the sizzle, creating a mouthwatering aroma that is hard to resist. Whether served with warm tortillas, guacamole, and salsa, or enjoyed with a side of rice and beans, chicken fajitas continue to be a beloved dish that brings people together around the table.
