Chicken Fajitas

Ingredients
- 1 pound boneless, skinless chicken breasts, sliced into thin strips
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
- 8 small flour tortillas
- Optional toppings: sour cream, guacamole, shredded cheese, salsa
Instructions
- In a large bowl, combine the sliced chicken with the vegetable oil, minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Toss to coat the chicken evenly. Let it marinate for at least 10 minutes.
- Heat a large skillet over medium-high heat. Add the marinated chicken to the skillet and cook for 5-6 minutes, or until the chicken is cooked through and slightly browned. Remove the chicken from the skillet and set aside.
- In the same skillet, add a little more oil if needed and sauté the sliced bell peppers and onions for 3-4 minutes, or until they are tender-crisp.
- Return the cooked chicken to the skillet with the vegetables and stir to combine. Cook for an additional 2-3 minutes to heat everything through.
- Sprinkle the chopped cilantro over the chicken and vegetable mixture and stir to combine.
- Warm the flour tortillas in a separate skillet or in the microwave according to package instructions.
- To serve, spoon the chicken and vegetable mixture onto the warm tortillas. Add optional toppings such as sour cream, guacamole, shredded cheese, and salsa if desired.
