Ingredients
- 12 oz spaghetti
- 2 chicken breasts, diced
- 6 slices of bacon, chopped
- 3 cloves of garlic, minced
- 1 cup grated Parmesan cheese
- 4 large eggs
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot of boiling salted water, cook 12 oz of spaghetti according to package instructions. Drain and set aside.
- In a large skillet, cook 6 slices of chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
- Season 2 diced chicken breasts with salt and pepper. Add the chicken to the skillet with the bacon fat and cook until golden and cooked through, about 5-7 minutes. Add 3 cloves of minced garlic and cook for an additional 1-2 minutes.
- In a bowl, whisk together 1 cup of grated Parmesan cheese, 4 large eggs, and 1/2 cup of heavy cream. Season with salt and pepper.
- Add the cooked spaghetti to the skillet with the chicken and bacon. Pour the egg and cheese mixture over the spaghetti and quickly toss everything together, ensuring the eggs don't scramble. The residual heat will cook the eggs and create a creamy sauce.
- Garnish with fresh parsley and additional Parmesan cheese if desired. Serve immediately and enjoy!
