Created by: Howcan Team
Ingredients
- 4 chicken thighs
- 4 chicken drumsticks
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 3 tablespoons olive oil
- 1 onion, chopped
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 8 ounces mushrooms, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes
- 1 can (28 ounces) crushed tomatoes
- 1/2 cup chicken broth
- 1/4 cup red wine
- 2 tablespoons tomato paste
- 2 tablespoons chopped fresh parsley
Instructions
- Season the chicken thighs and drumsticks with salt and pepper, then dredge in the flour, shaking off any excess.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 8 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion, bell peppers, and mushrooms. Cook until the vegetables are softened, about 5 minutes.
- Stir in the garlic, oregano, basil, and red pepper flakes, and cook for 1 minute.
- Add the crushed tomatoes, chicken broth, red wine, and tomato paste to the skillet. Bring to a simmer.
- Return the chicken to the skillet, nestling it into the sauce. Cover and simmer for 45 minutes, or until the chicken is cooked through.
- Sprinkle with chopped parsley before serving. Enjoy the Chicken Cacciatore with pasta or crusty bread.
Chicken Cacciatore, a classic Italian dish, has a rich history dating back to the Renaissance period. The term "cacciatore" translates to "hunter" in Italian, reflecting its origins as a rustic hunter's meal. Renowned chefs like Lidia Bastianich and Mario Batali have popularized their versions of Chicken Cacciatore, adding their unique twists to the traditional recipe. While this dish is enjoyed throughout Italy, it is particularly celebrated in the regions of Tuscany and Umbria.
