Instructions

  • In a small bowl, mix together 1/4 cup mayonnaise, 2 tablespoons minced chipotle peppers in adobo sauce, 1 tablespoon lime juice, 1 teaspoon garlic powder, 1 teaspoon cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to make the spicy chipotle mayo. Set aside.
  • Season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let it rest for a few minutes before slicing into strips.
