Ingredients
- 1 lb of chicken breast, cut into 1-inch cubes
- 2 bell peppers, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1 zucchini, sliced
- 1/4 cup of olive oil
- 3 tablespoons of soy sauce
- 2 tablespoons of honey
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 8 skewers, soaked in water for 30 minutes
Instructions
- In a small bowl, whisk together 1/4 cup of olive oil, 3 tablespoons of soy sauce, 2 tablespoons of honey, 2 cloves of minced garlic, 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to make the marinade.
- Place the chicken cubes in a resealable plastic bag and pour half of the marinade over the chicken. Seal the bag and marinate in the refrigerator for at least 30 minutes.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated chicken, bell peppers, red onion, and zucchini onto the soaked skewers, alternating the ingredients.
- Brush the skewers with the remaining marinade.
- Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
