Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 6 cups chicken broth
- 1 cup quinoa, rinsed
- 2 cups cooked chicken, shredded
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrots, and diced celery. Cook for another 5 minutes, until the vegetables begin to soften.
- Add the dried thyme and oregano, and stir to combine.
- Pour in the chicken broth and bring the soup to a boil.
- Once boiling, add the rinsed quinoa and reduce the heat to a simmer. Cook for 15 minutes, or until the quinoa is tender.
- Stir in the cooked shredded chicken and season the soup with salt and pepper to taste.
- Simmer for an additional 5 minutes to heat the chicken through.
- Ladle the soup into bowls and garnish with fresh parsley before serving.
