  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  • In a large bowl, mix 2 cups of cooked and shredded chicken breast, 1 cup of shredded cheddar cheese, 1 cup of shredded Monterey Jack cheese, 1/2 cup of diced onion, 1/2 cup of diced bell pepper, and 1/4 cup of chopped fresh cilantro. Season with salt and pepper to taste.
  • Place a large skillet over medium heat and add 1/2 tablespoon of vegetable oil. Place one flour tortilla in the skillet and spoon a quarter of the chicken and cheese mixture onto one half of the tortilla. Fold the other half over the filling to create a half-moon shape.
  • Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
  • Slice the quesadillas into wedges and serve hot with your favorite toppings such as salsa, guacamole, or sour cream.
