  • 2 packages (14 ounces) refrigerated pie crusts

Instructions

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine 2 cups of cooked shredded chicken, 1 cup of shredded mozzarella cheese, 1/2 cup of chopped onion, 1/4 cup of chopped fresh cilantro, 2 tablespoons of lime juice, 1 teaspoon of lime zest, 1 teaspoon of ground cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Unroll the pie crusts on a lightly floured surface. Roll out slightly with a rolling pin. Using a 4-inch round cutter, cut out circles from the dough. Reroll the scraps and continue cutting until all the dough is used.
  • Place about 1 tablespoon of the chicken and cheese filling in the center of each dough circle. Brush the edges with water, fold the dough over the filling, and press the edges with a fork to seal. Place the empanadas on the prepared baking sheet.
  • Brush the tops of the empanadas with the beaten egg. Bake for 20-25 minutes, or until golden brown.
