  • 1 egg, beaten
  • 1/4 cup chipotle peppers in adobo sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • 1/4 tsp salt

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine 1 lb of cooked shredded chicken, 1 cup of shredded cheddar cheese, 1/2 cup of diced onion, 1/4 cup of diced green bell pepper, 2 cloves of minced garlic, 1/4 cup of chopped fresh cilantro, 1 tsp of ground cumin, 1/2 tsp of chili powder, 1/2 tsp of salt, and 1/4 tsp of black pepper.
  • Roll out the pie crusts and cut out circles using a 4-inch cookie cutter. Place a spoonful of the chicken and cheese mixture onto each circle.
