Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the diced chicken breast and cook until browned, about 5 minutes.
  • Add the chopped onion and minced garlic, and cook for another 3 minutes until the onion is translucent.
  • Stir in the shredded cabbage and sliced carrots, and cook for 5 minutes until the vegetables start to soften.
  • Pour in the chicken broth and add the dried thyme, salt, and black pepper.
  • Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes, or until the chicken is cooked through and the vegetables are tender.
