This hearty stew features tender chicken pieces simmered in a savory tomato sauce with potatoes, carrots, bell peppers, and green peas. The dish is believed to have been influenced by Spanish cuisine, particularly the traditional Spanish stew, "afritada." Over the years, Filipino chefs and home cooks have added their own unique twists to the recipe, making it a beloved comfort food across the Philippines. Today, the best versions of Chicken Afritada can be found in local Filipino restaurants and homes, where it is often served with steamed rice for a satisfying meal. For the best Chicken Afritada, it's essential to use fresh, high-quality ingredients, especially ripe tomatoes for the flavorful sauce and succulent chicken pieces for a tender texture. Some variations of the dish also include the addition of hotdogs or chorizo for an extra burst of flavor. Additionally, marinating the chicken in a blend of soy sauce, vinegar, and garlic before cooking can enhance the dish's overall taste.
