Ingredients
- 2 lbs chicken thighs
- 1 cup soy sauce
- 1 cup white vinegar
- 1 head garlic, minced
- 1 onion, sliced
- 3 bay leaves
- 1 teaspoon whole peppercorns
- 1 tablespoon cooking oil
- 1 cup water
- 2 tablespoons brown sugar
Instructions
- In a large bowl, combine 1 cup soy sauce, 1 cup white vinegar, minced garlic, sliced onion, bay leaves, and whole peppercorns.
- Add the chicken thighs to the marinade and let it sit for at least 30 minutes.
- Heat the cooking oil in a large pan over medium heat.
- Remove the chicken from the marinade and brown it in the hot oil for about 5 minutes on each side.
- Pour the marinade and water into the pan with the chicken. Add 2 tablespoons of brown sugar.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes, or until the chicken is tender and the sauce has thickened.
- Serve the chicken adobo hot over steamed rice, and enjoy!
