Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish or cast iron skillet.
  • Arrange the pitted cherries in a single layer in the prepared dish.
  • In a large bowl, whisk together 3/4 cup of flour, 1/2 cup of sugar, and 1/4 teaspoon of salt.
  • In a separate bowl, whisk together 3 eggs, 1 1/4 cups of milk, and 1 teaspoon of vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients, whisking until smooth.
  • Pour the batter over the cherries in the dish.
  • Bake for 45-50 minutes, or until the clafoutis is puffed and golden brown.
