Ingredients
- 4 cups of mixed salad greens
- 1 cup of cherry tomatoes, halved
- 1 cup of cucumber, sliced
- 1 cup of cooked and diced chicken breast
- 1/2 cup of sliced red onion
- 1/2 cup of shredded cheddar cheese
- 4 hard-boiled eggs, sliced
- 1/2 cup of sliced black olives
- 1/4 cup of chopped fresh parsley
- 1/4 cup of olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of Dijon mustard
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine 4 cups of mixed salad greens, 1 cup of cherry tomatoes, 1 cup of cucumber, 1 cup of cooked and diced chicken breast, 1/2 cup of sliced red onion, 1/2 cup of shredded cheddar cheese, 4 hard-boiled eggs, 1/2 cup of sliced black olives, and 1/4 cup of chopped fresh parsley.
- In a small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of Dijon mustard, 1/2 teaspoon of garlic powder, and salt and pepper to taste.
- Drizzle the dressing over the salad and toss to combine.
- Divide the salad among 4 plates and serve immediately.
