  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce

Instructions

  • Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.
  • Cook the jumbo pasta shells according to package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened, about 5 minutes.
  • In a large bowl, combine the cooked onion and garlic, drained spinach, ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, beaten egg, salt, and black pepper. Mix well.
  • Spread 1 cup of marinara sauce on the bottom of the prepared baking dish.
  • Stuff each cooked pasta shell with the spinach and cheese mixture, and place them in the baking dish.
  • Pour the remaining marinara sauce over the stuffed shells, and sprinkle the remaining 1/2 cup of mozzarella cheese on top.
  • Cover the baking dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Allow to cool for a few minutes before serving. Enjoy your extra cheesy spinach stuffed shells!
