Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook 1 lb of sausage over medium heat until browned. Drain excess fat and set aside.
  • In the same skillet, sauté 1/2 cup of diced onion and 1/2 cup of diced bell pepper until softened.
  • Stir in 1 cup of white rice, 2 cups of chicken broth, 1 teaspoon of garlic powder, 1/2 teaspoon of paprika, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
  • Transfer the sausage and rice mixture to a greased 9x13 inch baking dish. Sprinkle 1 cup of shredded cheddar cheese on top.
  • Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
  • Let it cool for 5 minutes before serving. Enjoy!
