Ingredients
- 1 pound turkey sausage
- 4 cups diced potatoes
- 1 small onion, chopped
- 1 red bell pepper, diced
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup chicken broth
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 1 cup milk
Instructions
- Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
- In a large skillet, heat the olive oil over medium heat. Add the turkey sausage and cook until browned, breaking it up into crumbles with a spoon. Remove the sausage from the skillet and set aside.
- In the same skillet, add the diced potatoes, onion, and red bell pepper. Cook for 5-7 minutes, or until the vegetables are slightly softened.
- Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes.
- Gradually pour in the chicken broth and milk, stirring constantly until the mixture thickens. Season with garlic powder, paprika, salt, and pepper.
- Stir in half of the cheddar and mozzarella cheese until melted. Remove from heat.
- Transfer the sausage and vegetable mixture to the prepared baking dish. Sprinkle the remaining cheese on top.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Allow to cool for 5 minutes before serving. Enjoy!
