Cheesy Cauliflower and Sausage Casserole

Ingredients
- 1 head of cauliflower, cut into florets
- 1 pound of sausage, casings removed
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup of shredded cheddar cheese
- 1/2 cup of grated Parmesan cheese
- 1 cup of heavy cream
- 1 teaspoon of dried thyme
- 1/2 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large pot of boiling salted water, blanch the cauliflower florets for 5 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through. Add the diced onion and minced garlic, and cook for an additional 3-4 minutes until the onion is softened.
- Stir in the heavy cream, dried thyme, paprika, salt, and pepper. Cook for 2-3 minutes until the sauce thickens slightly.

- Transfer the blanched cauliflower to the prepared baking dish. Pour the sausage and cheese mixture over the cauliflower, spreading it out evenly.
- Sprinkle the remaining cheddar and Parmesan cheese over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is golden and bubbly.
- Allow the casserole to cool for 5 minutes before serving. Enjoy!
