  • Scrub the potatoes clean and pat them dry. Prick each potato several times with a fork.
  • Rub the potatoes with olive oil, then sprinkle with salt and pepper. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.
  • Remove the potatoes from the oven and let them cool for a few minutes. Reduce the oven temperature to 350°F (175°C).
  • Once the potatoes are cool enough to handle, slice off the top third of each potato and scoop out the flesh into a bowl, leaving a thin shell of potato inside the skin.
  • Mash the potato flesh with sour cream, half of the shredded cheddar cheese, and half of the chopped chives. Season with salt and pepper to taste.
  • Spoon the mashed potato mixture back into the potato shells. Top with the remaining shredded cheddar cheese.
  • Place the stuffed potatoes on a baking sheet and return to the oven. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and sprinkle with the remaining chopped chives before serving. Enjoy!
