Instructions

  • In a bowl, whisk together 4 large eggs and 1/4 cup of milk until well combined. Season with salt and pepper to taste.
  • Melt 1 tablespoon of butter in a non-stick skillet over medium heat. Once the butter is melted, add the diced tomato to the skillet and cook for 2-3 minutes until slightly softened.
  • Pour the egg mixture over the tomatoes in the skillet. Let it sit for a few seconds, then gently stir with a spatula, lifting and folding the eggs until they are just set.
  • Sprinkle 1/2 cup of shredded cheddar cheese over the eggs and continue to gently fold until the cheese is melted and the eggs are cooked to your desired consistency.
  • Remove the skillet from the heat and transfer the scrambled eggs to serving plates. Garnish with fresh parsley if desired.
  • Serve immediately and enjoy!
