Ingredients
- 4 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheddar cheese
- 1 medium tomato, diced
- 1 tablespoon butter
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a bowl, whisk together 4 large eggs and 1/4 cup of milk until well combined. Season with salt and pepper to taste.
- Melt 1 tablespoon of butter in a non-stick skillet over medium heat. Once the butter is melted, add the diced tomato to the skillet and cook for 2-3 minutes until slightly softened.
- Pour the egg mixture over the tomatoes in the skillet. Let it sit for a few seconds, then gently stir with a spatula, lifting and folding the eggs until they are just set.
- Sprinkle 1/2 cup of shredded cheddar cheese over the eggs and continue to gently fold until the cheese is melted and the eggs are cooked to your desired consistency.
- Remove the skillet from the heat and transfer the scrambled eggs to serving plates. Garnish with fresh parsley if desired.
- Serve immediately and enjoy!
