Instructions
- In a large pot, combine the diced potatoes, chopped onion, chopped celery, and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
- In a separate bowl, whisk together the milk and flour until smooth. Gradually stir the mixture into the pot with the potatoes, and continue cooking and stirring until the soup has thickened.
- Reduce heat to low, then stir in the shredded cheddar cheese, garlic powder, dried thyme, salt, and pepper. Cook and stir until the cheese is melted and the soup is heated through.
