Ingredients
- 4 large potatoes, diced into cubes
- 1/2 cup diced jalapenos
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh chopped parsley for garnish
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the diced potatoes to the skillet and cook for 15-20 minutes, stirring occasionally, until they are golden and crispy.
- Add the diced jalapenos to the skillet and cook for an additional 2-3 minutes, until they are slightly softened.
- Sprinkle the paprika, garlic powder, salt, and pepper over the potatoes and jalapenos, and stir to combine.
- Sprinkle the shredded cheddar cheese over the top of the potatoes and cover the skillet with a lid. Let it cook for 2-3 minutes until the cheese is melted.
- Remove the skillet from the heat and garnish with fresh chopped parsley before serving.
