Tofu Chapchae

Ingredients
- 8 ounces of sweet potato noodles
- 1/4 cup soy sauce
- 2 tablespoons of sesame oil
- 2 tablespoons of brown sugar
- 1 block of firm tofu, drained and cut into thin strips
- 1 onion, thinly sliced
- 2 cloves of garlic, minced
- 1 carrot, julienned
- 1 red bell pepper, thinly sliced
- 4 green onions, cut into 2-inch pieces
- 1 cup of spinach
- 1 tablespoon of vegetable oil
- Toasted sesame seeds for garnish
- Salt and pepper to taste
Instructions
- Cook the sweet potato noodles according to package instructions. Drain and rinse with cold water. Set aside.
- In a small bowl, mix together 1/4 cup soy sauce, 2 tablespoons of sesame oil, and 2 tablespoons of brown sugar. Set aside.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu strips and cook until golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add the sliced onion, minced garlic, julienned carrot, and sliced red bell pepper. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add the cooked sweet potato noodles, green onions, and spinach to the skillet. Pour the soy sauce mixture over the noodles and vegetables. Toss everything together until well combined and heated through.
- Return the cooked tofu to the skillet and gently toss to combine with the noodles and vegetables. Season with salt and pepper to taste.
- Transfer the tofu chapchae to a serving platter and garnish with toasted sesame seeds. Serve hot and enjoy!
