Instructions

  • In a large skillet, heat 1/4 cup of vegetable oil over medium-high heat.
  • Fry the corn tortillas one at a time in the hot oil for about 1 minute on each side, until they are golden and crispy. Drain on paper towels.
  • Spread 1/4 cup of refried beans on each fried tortilla.
  • Top each chalupa with 1/4 cup of shredded chicken, 1/4 cup of shredded lettuce, 2 tablespoons of diced tomatoes, and 2 tablespoons of shredded cheese.
