  • 2 cloves of garlic, minced
  • 1 bell pepper, thinly sliced
  • 1 cup of broccoli florets
  • 1 carrot, julienned
  • 1/4 cup of soy sauce
  • 1 tablespoon of rice vinegar
  • 1 teaspoon of ginger, grated
  • 1/4 cup of green onions, chopped
  • Salt and pepper to taste

Instructions

  • In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.
  • Add the sliced onion and minced garlic, and sauté for 2-3 minutes until fragrant.
  • Add the grated cauliflower rice to the skillet and stir-fry for 5-6 minutes until tender.
  • Push the cauliflower rice to one side of the skillet and add the remaining tablespoon of sesame oil to the empty side.
  • Add the bell pepper, broccoli, and carrot to the skillet and stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • In a small bowl, whisk together the soy sauce, rice vinegar, and grated ginger. Pour the sauce over the cauliflower rice and vegetables, and toss to combine.
  • Cook for an additional 2-3 minutes, stirring constantly, until the sauce has thickened and coated the stir fry.
  • Season with salt and pepper to taste, and garnish with chopped green onions before serving.
  • Serve the cauliflower rice stir fry hot and enjoy!
