Carne Asada Quesadilla

Ingredients
- 1 pound flank steak, thinly sliced
- 1/4 cup orange juice
- 1/4 cup lime juice
- 3 cloves garlic, minced
- 1/4 cup chopped cilantro
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large flour tortillas
- 2 cups shredded Mexican cheese blend
- 1 tablespoon vegetable oil
Instructions
- In a large bowl, combine the orange juice, lime juice, minced garlic, chopped cilantro, cumin, chili powder, salt, and black pepper.
- Add the thinly sliced flank steak to the marinade, making sure it is well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Heat a grill or grill pan over medium-high heat. Grill the marinated steak for 3-4 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for 5 minutes before slicing it into thin strips.
- Place a large skillet over medium heat and add 1/2 tablespoon of vegetable oil. Place a flour tortilla in the skillet and sprinkle 1/2 cup of shredded cheese over half of the tortilla. Arrange a portion of the sliced carne asada on top of the cheese, then fold the tortilla in half to cover the filling.
- Cook the quesadilla for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas, cheese, and carne asada.
- Slice the quesadillas into wedges and serve hot with your favorite toppings such as salsa, guacamole, and sour cream. Enjoy!
