Ingredients
- 12 oz spaghetti
- 4 slices of turkey bacon, chopped
- 2 cloves of garlic, minced
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot of boiling salted water, cook 12 oz of spaghetti according to package instructions. Drain well, reserving 1/2 cup of pasta water.
- In a large skillet, cook 4 slices of chopped turkey bacon over medium heat until crispy. Add 2 cloves of minced garlic and cook for an additional 1-2 minutes.
- In a small bowl, whisk together 2 large eggs and 1/2 cup of grated Parmesan cheese. Season with salt and black pepper to taste.
- Add the cooked spaghetti to the skillet with the turkey bacon and garlic. Toss to combine.
- Remove the skillet from the heat and quickly stir in the egg and cheese mixture, along with the reserved pasta water. The heat from the pasta will cook the eggs, creating a creamy sauce.
- Sprinkle with 2 tablespoons of chopped fresh parsley and additional Parmesan cheese, if desired. Serve immediately and enjoy!
