Instructions

  • In a small bowl, dissolve the honey in the warm water. Sprinkle the yeast over the water and let it sit for 5 minutes until foamy.
  • In a large mixing bowl, combine the rye flour, bread flour, caraway seeds, sunflower seeds, and salt.
  • Make a well in the center of the flour mixture and pour in the yeast mixture and olive oil. Stir until a dough forms.
  • Turn the dough out onto a floured surface and knead for 8-10 minutes, until smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  • Punch down the dough and shape it into a loaf. Place the loaf on a greased baking sheet, cover with the kitchen towel, and let it rise for another 30 minutes.
  • Preheat the oven to 375°F (190°C).
  • Bake the bread for 30-35 minutes, or until it sounds hollow when tapped on the bottom.
  • Allow the bread to cool on a wire rack before slicing and serving.
