Instructions

  • Add the thinly sliced onions and cook, stirring occasionally, for about 10-15 minutes or until the onions are caramelized and golden brown. Remove the onions from the skillet and set aside.
  • In the same skillet, add the sliced mushrooms and cook for 5-7 minutes until they are tender and any liquid has evaporated. Remove the mushrooms from the skillet and set aside.
  • Preheat the broiler in your oven.
  • In a large bowl, whisk together 8 large eggs, 1/4 cup of milk, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Return the caramelized onions and mushrooms to the skillet and spread them out evenly.
  • Pour the egg mixture over the onions and mushrooms, and cook over medium heat for 5-7 minutes, or until the edges are set but the center is still slightly runny.
  • Sprinkle the shredded cheese over the top of the frittata and place the skillet under the broiler for 2-3 minutes, or until the top is set and golden brown.
  • Remove the skillet from the oven and let the frittata cool for a few minutes.
