Caldo Gallego is a traditional Spanish soup hailing from the region of Galicia. Originally made with turnip greens, this hearty dish has evolved to include kale as a popular alternative. The history of Caldo Gallego dates back to the rural communities of Galicia, where it was a staple for farmers and shepherds. The soup is known for its simplicity, featuring ingredients like kale, potatoes, chorizo, and sometimes ham or bacon. Chefs and home cooks in Galicia take pride in perfecting this comforting dish, with renowned restaurants in cities like Santiago de Compostela and A Coruña serving exceptional versions. The key to an authentic Caldo Gallego lies in the quality of the ingredients, particularly the kale, which should be fresh and vibrant. While turnip greens are traditional, kale adds a robust and slightly bitter flavor, making it a delicious alternative. Whether enjoyed in a rustic tavern or a modern bistro, Caldo Gallego with kale continues to be a beloved part of Galician cuisine.
