Caldo Gallego with Kale

Ingredients
- 1/2 pound chorizo sausage, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 large potatoes, peeled and diced
- 1 bunch kale, stems removed and leaves chopped
- 1 can (15 oz) white beans, drained and rinsed
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, cook 1/2 pound of sliced chorizo sausage over medium heat until browned. Remove from the pot and set aside.
- In the same pot, add 1 chopped onion and 3 minced garlic cloves. Cook until the onion is translucent.
- Pour in 6 cups of chicken broth and bring to a boil.
- Add 2 large peeled and diced potatoes to the pot. Reduce heat and simmer for 15 minutes, or until the potatoes are tender.
- Stir in the chopped kale and cook for an additional 5 minutes, until the kale is wilted.
- Add the cooked chorizo back to the pot, along with 1 can of drained and rinsed white beans.
- Season the soup with 1 teaspoon of paprika, salt, and pepper to taste. Simmer for another 5 minutes to allow the flavors to meld.
- Serve the Caldo Gallego with Kale hot and enjoy!
