Ingredients
- 1 pound of large shrimp, peeled and deveined
- 2 tablespoons of Cajun seasoning
- 1 tablespoon of olive oil
- 1 cup of wild rice
- 2 cups of chicken broth
- 1/2 cup of diced onion
- 1/2 cup of diced bell pepper
- 2 cloves of garlic, minced
- 1 can (14.5 oz) of diced tomatoes, drained
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a bowl, toss the peeled and deveined shrimp with 2 tablespoons of Cajun seasoning until evenly coated.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the diced onion, bell pepper, and minced garlic. Sauté for 3-4 minutes until the vegetables are softened.
- Stir in 1 cup of wild rice and cook for 1 minute, then pour in 2 cups of chicken broth and bring to a boil.
- Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, stir in the drained diced tomatoes and cooked shrimp. Season with salt and pepper to taste.
- Garnish with chopped fresh parsley before serving.
