Ingredients
- 1 lb of large shrimp, peeled and deveined
- 2 tbsp of Cajun seasoning
- 1 cup of long-grain white rice
- 1 3/4 cups of chicken broth
- 1/2 lb of andouille sausage, diced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 cloves of garlic, minced
- 1 can of diced tomatoes, drained
- 2 green onions, chopped
- 2 ripe plantains, peeled and sliced
- 2 tbsp of olive oil
- Salt and pepper to taste
Instructions
- In a bowl, toss the shrimp with 1 tbsp of Cajun seasoning. Set aside.
- In a medium saucepan, combine the rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender and liquid is absorbed.
