Instructions

  • In a large skillet, heat 1 teaspoon of olive oil over medium heat. Add 1 small chopped onion and cook until softened, about 3 minutes.
  • Add 1 pound of ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
  • Stir in 1 teaspoon of ground cumin, 1 teaspoon of chili powder, and salt and pepper to taste. Cook for an additional 2 minutes.
  • Add 1 can of refried beans to the skillet and cook until heated through, about 3 minutes.
  • Warm 4 large flour tortillas in the microwave for 20 seconds to make them more pliable.
  • Divide the beef and bean mixture evenly among the tortillas, spreading it down the center of each one.
  • Top each with 1/4 cup of shredded cheddar cheese, 2 tablespoons of salsa, and 1 tablespoon of chopped fresh cilantro.
  • Fold in the sides of the tortillas and then roll them up tightly to enclose the filling.
  • Place the burritos seam-side down in a large skillet over medium heat and cook until golden brown and crispy, about 2-3 minutes per side.
