Beef and Bean Burritos

Ingredients
- 1 pound ground beef
- 1 small onion, chopped
- 1 can (16 ounces) refried beans
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 1/4 cup chopped fresh cilantro
- 4 large flour tortillas
- 1 teaspoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 teaspoon of olive oil over medium heat. Add 1 small chopped onion and cook until softened, about 3 minutes.
- Add 1 pound of ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
- Stir in 1 teaspoon of ground cumin, 1 teaspoon of chili powder, and salt and pepper to taste. Cook for an additional 2 minutes.
- Add 1 can of refried beans to the skillet and cook until heated through, about 3 minutes.
- Warm 4 large flour tortillas in the microwave for 20 seconds to make them more pliable.
- Divide the beef and bean mixture evenly among the tortillas, spreading it down the center of each one.
- Top each with 1/4 cup of shredded cheddar cheese, 2 tablespoons of salsa, and 1 tablespoon of chopped fresh cilantro.
- Fold in the sides of the tortillas and then roll them up tightly to enclose the filling.
- Place the burritos seam-side down in a large skillet over medium heat and cook until golden brown and crispy, about 2-3 minutes per side.
- Serve the burritos hot, with additional salsa and sour cream if desired. Enjoy!
