Ingredients
- 1 pound ground beef
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 can (15 ounces) refried beans
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream
Instructions
- In a large skillet, cook 1 pound of ground beef, 1 chopped onion, and 1 minced garlic clove over medium heat until the beef is no longer pink. Drain any excess fat.
- Stir in 1 can of refried beans, 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook and stir until heated through.
- Warm the flour tortillas in the microwave for 20 seconds or in a dry skillet for 10 seconds on each side.
- Divide the beef and bean mixture evenly among the tortillas. Top each with 1/4 cup of shredded cheddar cheese, 1/4 cup of shredded lettuce, 2 tablespoons of diced tomatoes, and 1 tablespoon of chopped fresh cilantro.
- Fold in the sides of each tortilla and roll up tightly to enclose the filling.
