Instructions

  • In a large skillet, cook 1 pound of ground beef, 1 chopped onion, and 1 minced garlic clove over medium heat until the beef is no longer pink. Drain any excess fat.
  • Stir in 1 can of refried beans, 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook and stir until heated through.
  • Warm the flour tortillas in the microwave for 20 seconds or in a dry skillet for 10 seconds on each side.
  • Divide the beef and bean mixture evenly among the tortillas. Top each with 1/4 cup of shredded cheddar cheese, 1/4 cup of shredded lettuce, 2 tablespoons of diced tomatoes, and 1 tablespoon of chopped fresh cilantro.
  • Fold in the sides of each tortilla and roll up tightly to enclose the filling.
