Budae Jjigae

Ingredients
- 4 cups of chicken or beef broth
- 1/2 cup of kimchi, chopped
- 1/2 cup of spam, sliced
- 1/2 cup of hot dogs, sliced
- 1/2 cup of tofu, cubed
- 1/2 cup of sliced mushrooms
- 1/2 cup of sliced onion
- 1/2 cup of instant ramen noodles
- 2 tablespoons of gochujang (Korean red chili paste)
- 2 tablespoons of soy sauce
- 1 tablespoon of minced garlic
- 1 tablespoon of vegetable oil
- 1 tablespoon of sugar
- 1 green onion, chopped (for garnish)
- 1/2 cup of sliced cheese (optional)
Instructions
- In a large pot, heat 1 tablespoon of vegetable oil over medium heat.
- Add 1/2 cup of sliced onion and cook until translucent.
- Add 1/2 cup of spam, 1/2 cup of hot dogs, and 1/2 cup of sliced mushrooms. Cook for 3-4 minutes.
- Stir in 1 tablespoon of minced garlic and cook for another minute.
- Pour in 4 cups of chicken or beef broth, 2 tablespoons of gochujang, 2 tablespoons of soy sauce, and 1 tablespoon of sugar. Bring to a boil.
- Add 1/2 cup of kimchi, 1/2 cup of tofu, and 1/2 cup of instant ramen noodles. Simmer for 5-7 minutes, or until the noodles are cooked.
- Taste and adjust seasoning if needed.
- If using, place 1/2 cup of sliced cheese on top of the stew and let it melt.
- Garnish with chopped green onions.
- Serve hot and enjoy!
