  • 1/2 cup of instant ramen noodles
  • 2 tablespoons of gochujang (Korean red chili paste)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of minced garlic
  • 1 tablespoon of vegetable oil
  • 1 tablespoon of sugar
  • 1 green onion, chopped (for garnish)
  • 1/2 cup of sliced cheese (optional)

  • Stir in 1 tablespoon of minced garlic and cook for another minute.
  • Pour in 4 cups of chicken or beef broth, 2 tablespoons of gochujang, 2 tablespoons of soy sauce, and 1 tablespoon of sugar. Bring to a boil.
  • Add 1/2 cup of kimchi, 1/2 cup of tofu, and 1/2 cup of instant ramen noodles. Simmer for 5-7 minutes, or until the noodles are cooked.
  • Taste and adjust seasoning if needed.
  • If using, place 1/2 cup of sliced cheese on top of the stew and let it melt.
  • Garnish with chopped green onions.
  • Serve hot and enjoy!
