Budae Jjigae, also known as "Army Stew," originated in South Korea after the Korean War when food was scarce. This fusion dish symbolizes the resilience and adaptability of the Korean people during challenging times. Today, Budae Jjigae is a popular comfort food enjoyed in restaurants across South Korea, especially in the regions near Uijeongbu, where it is said to have originated. The key to a delicious Budae Jjigae lies in the balance of savory and spicy flavors, with the quality of the kimchi and gochujang being crucial. Some chefs also add instant ramen noodles to the stew for an extra comforting touch.
