Instructions

  • In a large bowl, combine the buckwheat flour, all-purpose flour, yeast, and salt.
  • Add the honey to the warm water and stir until dissolved.
  • Pour the honey water into the flour mixture and stir to combine.
  • Knead the dough on a floured surface for 5-7 minutes, adding more flour if necessary, until the dough is smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  • Preheat the oven to 375°F (190°C).
  • Punch down the dough and shape it into a loaf. Place the loaf on a greased baking sheet or in a greased loaf pan.
  • Cover the loaf with the kitchen towel and let it rise for another 30 minutes.
  • Brush the top of the loaf with olive oil.
  • Bake for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  • Allow the bread to cool on a wire rack before slicing and serving.
