Ingredients
- 1 cup of brown rice
- 14 oz block of firm tofu, drained and cubed
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of sesame oil
- 1 tablespoon of cornstarch
- 1 tablespoon of vegetable oil
- 1 small onion, sliced
- 2 cloves of garlic, minced
- 1 bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of snap peas
- 1 carrot, julienned
- 1/4 cup of chopped green onions
- Salt and pepper to taste
Instructions
- Cook 1 cup of brown rice according to package instructions and set aside.
- In a bowl, mix 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 1 tablespoon of sesame oil, and 1 tablespoon of cornstarch. Add the cubed tofu and marinate for 15 minutes.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated tofu and cook until golden brown. Remove from the skillet and set aside.
- In the same skillet, add a little more oil if needed and sauté 1 small sliced onion and 2 minced garlic cloves until fragrant.
- Add 1 sliced bell pepper, 1 cup of broccoli florets, 1 cup of snap peas, and 1 julienned carrot to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- Add the cooked brown rice and the cooked tofu back into the skillet. Stir in 1 tablespoon of sesame oil and toss everything together until well combined.
- Season with salt and pepper to taste, and sprinkle with 1/4 cup of chopped green onions before serving.
