Instructions

  • Bring a large pot of salted water to a boil. Add 8 oz of brown rice pasta and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat 1/4 cup of extra virgin olive oil over medium heat. Add 3 cloves of minced garlic and sauté for 1-2 minutes, or until fragrant but not browned.
  • Add the cooked brown rice pasta to the skillet and toss to coat with the garlic-infused olive oil. Season with salt and freshly ground black pepper to taste.
  • Remove the skillet from the heat and sprinkle 2 tablespoons of chopped fresh parsley over the pasta. Toss to combine.
  • Divide the brown rice pasta into serving bowls and serve immediately. Enjoy!
