Instructions

  • Cook 1 cup of brown rice according to package instructions.
  • While the rice is cooking, cut the pressed tofu into cubes and marinate in a mixture of 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp sesame oil, grated ginger, and minced garlic for 10 minutes.
  • Heat a grill pan over medium-high heat and grill the marinated tofu for 3-4 minutes on each side, until golden brown and slightly crispy.
  • In a separate pan, heat 1 tbsp of olive oil over medium heat. Add the fresh spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper to taste.
  • To assemble the bowls, divide the cooked brown rice, grilled tofu, and sautéed spinach among 4 serving bowls.
  • Garnish with sesame seeds and serve hot. Enjoy!
