Ingredients
- 1 cup of brown rice
- 2 cups of water
- 1 pound of boneless, skinless chicken breasts
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 cups of broccoli florets
- 2 tablespoons of soy sauce
- 1 tablespoon of honey
- 1 teaspoon of sesame seeds
Instructions
- In a medium saucepan, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes, or until the rice is tender and the water is absorbed.
- Preheat the grill to medium-high heat. In a small bowl, mix together 1 tablespoon of olive oil, 1 teaspoon of garlic powder, 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Brush the chicken breasts with the oil and spice mixture, then grill for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let rest for 5 minutes before slicing.
- While the chicken is grilling, steam the broccoli florets in a steamer basket over boiling water for 5-7 minutes, or until tender-crisp.
- In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of honey, and 1 teaspoon of sesame seeds.
- To assemble the bowls, divide the cooked brown rice among 4 serving bowls. Top each bowl with sliced grilled chicken and steamed broccoli. Drizzle the soy sauce mixture over the top. Serve and enjoy!
