Ingredients
- 2 cups of cooked white rice
- 2 cups of broccoli florets
- 1/2 cup of diced carrots
- 1/2 cup of frozen peas
- 3 cloves of garlic, minced
- 1/4 cup of soy sauce
- 2 tablespoons of sesame oil
- 2 eggs, beaten
- 2 green onions, chopped
- 1 tablespoon of vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add 2 cups of broccoli florets and 1/2 cup of diced carrots to the skillet, and stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Push the vegetables to one side of the skillet, and pour the beaten eggs into the other side. Scramble the eggs until they are cooked through, then mix them with the vegetables.
- Add 3 cloves of minced garlic and 1/2 cup of frozen peas to the skillet, and stir-fry for an additional 1-2 minutes.
