  • Scrub the potatoes and pierce them with a fork. Rub the potatoes with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.
  • In the meantime, steam the broccoli florets until they are tender, about 5-7 minutes. Set aside.
  • Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a slit lengthwise across the top of each potato and gently squeeze the ends to open.
  • Fluff the insides of the potatoes with a fork. Season with salt and pepper to taste.
  • Divide the steamed broccoli and cheddar cheese evenly among the potatoes, stuffing them into the fluffed insides.
  • Return the stuffed potatoes to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  • Remove the potatoes from the oven and sprinkle with chopped chives before serving.
