Instructions

  • Preheat the oven to 400°F (200°C).
  • Scrub the potatoes and pierce them several times with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.
  • While the potatoes are baking, steam the broccoli until tender, about 5-7 minutes. Set aside.
  • Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a slit lengthwise across the top of each potato and gently squeeze the ends to open.
  • Fluff the insides of the potatoes with a fork. Season with salt and pepper to taste.
  • Divide the steamed broccoli evenly among the potatoes, then top each with 1/4 cup of shredded cheddar cheese and 2 tablespoons of sour cream.
  • Place the stuffed potatoes back in the oven for 5-7 minutes, or until the cheese is melted and bubbly.
  • Serve hot and enjoy!
